Endive

Endive is a leafy vegetable that belongs to the genus of Cichorium. Several other bitter leafed vegetables belong to this genus, such as Cichorium endivia (also called endive), Cichorium pumilum (also called wild endive) and Cichorium intybus (also called common chicory). Varieties like radicchio, Belgian endive and puntarelle are different types of common chicory.

As a vegetable, endive is full of vitamins and minerals, especially folate and vitamins A and K. Endive is also rich in fiber.
